These all make a great everyday cookie and makes a easy & delicous Christmas Cookies.



Chewy Giant Ginger Cookies


INGREDIENTS:
4 1/2 cups of all purpose flour
4 teaspoons ground ginger
2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 teaspoon ground cloves
1/4 teaspoon salt
1 1/2 cup shortening
2 cups sugar
2 eggs
1/2 cup molasses
3/4 cup coarse sugar(to roll cookies in)

DIRECTIONS: In a large mixing bowl blend together shortening, sugar, molasses and eggs. And in a medium bowl combine together all the rest of the dry ingredients. Add then slowly add into the dry ingredients wet mixture.

Preheat Oven to 350 degrees. Using a ungreased cookie sheet. Shape cookie dough into 2 inch balls. Then roll into the course sugar. Place about 2 1/2 inches apart on to ungreased baking sheet. Bake until bottom is lightly brown and tops are puffed.

Yields: 24

If you like a Smaller Cookie follow the same directons only instead roll the cookie dough into 1 inch balls then roll into the course sugar and Bake for 8-9 minutes.
