To Creating Opening for stuffing Tip - To create a pocket in a thick chop, use a sharp knife to make 2 inch wide opening on the fatty side. Working the knife through the chop to with in a 1/2 inch of edges. Do not cut thru chop leaving 3 sides intact.

Cranberry Apple Stuffed Pork Loin Recipe


INGREDIENTS:
    4 Tablespoons of butter or margerine
    1/2 cup finely chopped onion
    1/2 cup chopped celery
    2 cups soft bread cubes
    1 cup diced Granny Smith Apple or Mactinosh Apple
    1/2 cup dried cranberries
    1 teaspoon salt
    1/2 teaspoon pepper
    1 tablespoon cinnamon
    1 teaspoon nutmeg
    1/4 cup apple juice


DIRECTIONS:

  • Preheat oven to 350F (175 Degrees C)
  • Make Stuffing: In skillet on med-high heat melt 2 tablespoons butter and cook onion & celery until tender then add diced apples and bread cubes and slightly brown. remove from heat.
  • Add Cranberries, salt, cinnamon, nutmeg the pepper and 1/4 cup apple juice. Toss lightly to combine.
  • Stuff each chop with stuffing.
  • Take the last 2 tablespoons melt butter on medium high heat and pan fry stuffed chops for 3 minutes each side. Cover and bake for 45 minutes.
