Easy Meatloaf Recipes can be made with basic Ingredients like eggs, milk, oatmeal, bread crumbs, onions, peppers & more... Meatloaf Tips:

    Hide vegetable in your meatloaf like shredded carrots, zucchini or mushrooms.

    Use a meat thermometer to measure the the internal meat temperture by inserting into the middle must rearch before you serve & no longer pink.

    Ground Beef(hamburger) 160 degrees
    Ground Pork 170 degrees
    Ground Turkey & Chicken 180 degrees
    Ground Lamb 170 degrees
    Bake in muffin tins or mini-loaf pans for individual servings.

    Use leftovers sliced in sandwiches or crumbled in sauces or chili.

    Replace some of the liquid in the recipe with red wine or dark beer.

    Add a cup of grated or shredded cheese to the meatloaf and top with more cheese about 10 minutes before it's done.

Barbecue Meatloaf Recipe

Ingredients
1 1/2 pounds ground beef
1 cup fresh bread crumbs
1 onion, diced
1 egg, lightly beaten
1 1/2 teaspoons salt
1/2 teaspoon pepper
2 (8-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup water, to thin sauce if necessary

Directions
Preheat oven to 350 degrees F.

Mix together the beef, bread crumbs, onion, egg, salt, pepper, and 1/2 cup of the tomato sauce. Form this mixture into a loaf and place it in a shallow pan.

Stir together the remaining tomato sauce, vinegar, sugar, mustard, Worcestershire and the water (if too thick). Pour this sauce over the meatloaf.

Bake for 1 hour, basting every 15 minutes with the pan juices.

Easy Meatloaf Recipes

Ingredients
1 1/2 pounds ground beef
1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs
salt and pepper to taste
2 tablespoons brown sugar
2 tablespoons prepared mustard
1/3 cup ketchup

Directions
Preheat oven to 350 degrees F (175 degrees C). In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 5 x 9 inch loaf pan, OR form into a loaf and place in a lightly greased 9 x 13 inch baking dish. In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf. Bake at 350 degrees F (175 degrees C) for 1 hour.

Easy Meatloaf Recipes II

Ingredients
2 eggs, beaten
1/3 cup ketchup
3/4 cup water
1 packet dry onion soup mix
1 1/2 cups bread crumbs
2 pounds lean ground beef

Directions
Combine eggs, ketchup, water, and soup mix; mix well. Add bread crumbs and beef; mix well.

Shape into loaf and place in a shallow pan or loaf pan.

Bake at 350 degrees for about 1 1/4 hours.

Mexican Meatloaf Recipe

Ingredients
1 cup salsa
2 eggs, lightly beaten
1/2 cup dry bread crumbs
1/4 cup finely chopped onion
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon chili powder
1-1/2 pounds lean ground beef
1 jar (16 ounces) picante sauce

Directions

In a large bowl, combine the first seven ingredients. Add beef and mix well.

Pat into a greased 8-in. x 4-in. loaf pan.

Bake, uncovered, at 350 degrees for 1 hour or a meat thermometer reaches 160 degrees.

Top with warm picante sauce.

Yield: 6 servings.


Southern Meatloaf Recipe

Ingredients
2 tbsp unsalted butter
1 onion, finely chopped
1 rib celery, finely chopped
2 cloves garlic, minced
1/2 cup finely chopped scallions (green onions)
1/3 cup milk
1/3 cup ketchup
2 tsp salt
1 1/2 tsp freshly ground black pepper
1 tsp hot sauce
2 tsp Worcestershire sauce
1 1/2 pounds of ground chuck
1 pound ground pork
2 eggs, beaten
1 cup plain bread crumbs
For the Glaze:
1 tbsp dark molasses
1 tbsp brown sugar
2 tbsp ketchup

Directions
Preheat oven to 350 degrees F.

In a large pan cook the onions, garlic, celery, and scallions in the butter, over medium heat, for about 5 minutes, until the onions soften. Remove from heat, mix in the salt, pepper, hot sauce, Worcestershire sauce, ketchup, and milk, and let cool to room temperature.

In a large bowl, combine the meat, vegetable mixture, eggs, and breadcrumbs. Form into a loaf-shape, about 4-inches high, and put into a baking pan. Mix the molasses, brown sugar, ketchup in a small bowl and spread evenly over the meatloaf.

Bake the meatloaf in oven for 1 hour, or until the internal temperature reaches 170 degrees F.

Let rest for 10 minutes before serving.

Turkey Meatloaf Recipe

Ingredients
1/2 red bell pepper, seeded and coarsely chopped
1 medium carrot, coarsely chopped
1 medium onion, coarsely chopped
1 garlic clove
1 tablespoon extra-virgin olive oil
1 1/2 pounds ground turkey
1/2 pound ground pork
1/2 cup bread crumbs
2 large eggs
1 1/2 teaspoons salt
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
8 strips of bacon

Directions
Preheat the oven to 375 degrees. Place the red bell pepper, carrot, onion and garlic in a food processor and pulse until the mixture is finely chopped. In a medium skillet, heat the olive oil over medium heat. Add the chopped vegetables and cook until softened, about 5 minutes.

In a large mixing bowl, combine the vegetables, turkey, pork, bread crumbs, eggs, salt, Worcestershire sauce and ketchup and mix well.

Place the meat mixture in a 9-by-13-inch baking dish and, using your hands, form it into a loaf. Cover the loaf with the bacon strips. Bake the meat loaf, uncovered, until cooked through, about 1 hour.

Pour off the melted fat, slice the meat loaf and serve.

Vegetarian Meatloaf Recipe
Meatless Meatloaf

Ingredients
2 cups water
1 teaspoon salt
1 cup lentils
1 small onion , diced
1 cup quick-cooking oats
3/4 cup grated cheese (cheddar, swiss, jack or american)
1 egg , beaten
4 1/2 ounces spaghetti sauce or tomato sauce
1 teaspoon garlic powder
1 teaspoon dried basil
1 tablespoon dried parsley
1/2 teaspoon seasoning salt
1/4 teaspoon black pepper

Directions
Add salt to water and boil in a saucepan.

Add lentils and simmer covered 25-30 minutes, until lentils are soft and most of water is evaporated. Remove from fire. Drain and partially mash lentils. Scrape into mixing bowl and allow to cool slightly. Stir in onion, oats and cheese until mixed. Add egg, tomato sauce, garlic, basil, parsley, seasoning salt and pepper. Mix well.

Spoon into loaf pan that has been generously sprayed with Pam (non-stick cooking spray) or well-greased. 10Smooth top with back of spoon.

Bake at 350 degrees for 30- 45 minutes until top of loaf is dry, firm and golden brown. Cool in pan or rack for about 6 minutes. Run a sharp knife around edges of pan then turn out loaf onto serving platter.
