Meatball recipes are maded with ground meat and normal have a special sauce to go with them like sweet and sour, BBQ or swedish meatball sauce to name a few. It's not uncommon to have meatballs as a appetizer or just the main meal. You can grill, bake, fry or even throw them into a crockpot to slow cook.

Ingredients

2 lbs lean ground pork

1 cup ice water

1/4 cup soy sauce

1/4 tsp freshly ground black pepper

Procedure

Heat oven to 375 degrees F. With hands or wooden spoon mix pork, water, soy sauce and pepper thoroughly in large bowl. Shape into 3/4 -inch balls (mixture will be fairly soft and balls will not be perfect). Arrange closely together in single layer on ungreased shallow baking pan, like a jelly-roll pan. Bake for 20-30 minutes. Remove from pan, and serve immediately with a dipping sauce, like your favorite salad dressings (Russian, Thousand Island, Ranch) or choose from the suggestions below. Use toothpicks to skewer meatballs to dip. Or remove from pan, cool, cover and freeze or refrigerate. Serve cold or reheated.

Servings: 7

Yield: Makes about 7 dozen meatballs.

Cheeseburger Noodles

Cheeseburger Noodles

Ingredients

8 oz Medium or Wide Egg Noodles, uncooked

1 lb extra lean ground beef

1/4 cup dry breadcrumbs

1/2 tsp onion powder

1/2 tsp salt, divided

1 egg 2 tsp. vegetable oil

1 14 1/2-oz. can fat-free chicken broth

1/4 cup water

1/4 cup ketchup

1/2 cup non-fat sour cream

1 cup shredded low-fat Cheddar cheese

Procedure

Combine ground beef, breadcrumbs, onion powder, 1/4 tsp. salt and egg; mix well. Shape into approximately 36 3/4-inch meatballs. Heat oil in a large skillet coated with cooking spray. Add meatballs and cook until browned on all sides. Drain well. Combine chicken broth, water, ketchup and remaining 1/4 teaspoon salt; add to skillet. Bring to a boil; stir in noodles, making sure it is covered by the liquid. Reduce heat, cover, and simmer 10 to 15 minutes or until noodles are done. Stir in sour cream and cheese. Cook until thoroughly heated and mixture thickens, about 5 minutes. (Do not boil.)
