Zucchini Bread Recipes This vegetable was once thought to be a summer vegetable in the past. Now with todays technology imported & exporting and hot house we can have zucchini all year round.
Zucchini Bread RecipeINGREDIENTS:
1/2 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 1 tablespoon ground cinnamon 3 eggs 2 1/3 cups sugar 3 teaspoons vanilla extract 1 cup of oil 2 cups zucchini(grated) 1 cup walnuts(chopped optional) INSTRUCTIONS:
- Grease and flour 2 - 8 x 4 inch pan. - Beat eggs, vanilla, sugar, cinnamon and oil together in large bowl. - Add all dry ingredients into bowl of wet ingredients and mix well - Then stir in walnuts(optional) and zucchini. Pour into prepared pans. - Bake for 45-55 minutes until knife come out clean when inserted. - Cool in pan for 15 minutes. Remove from pans and cool completely. Lemon Zucchini Bread RecipeINGREDIENTS:
3/4 cup sugar 1 egg 1/2 cup vegetable oil 1 1/2 cups all-purpose flour 1/4 teaspoon salt 1/4 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon ground cinnamon 2 teaspoons lemon zest
- Grease an flour 8 x 4 inch loaf pan. - Preheat oven to 325 degrees F(165 degrees C). - Grease and flour 2 - 8 x 4 inch pan. - Beat eggs, vanilla, sugar, cinnamon and oil together in large bowl. - Add all dry ingredients into bowl of wet ingredients and mix well. - Then stir in walnuts(optional) and zucchini. Pour into prepared pans. - Bake for 45-55 minutes until knife come out clean when inserted. - Cool in pan for 15 minutes. Remove from pans and cool completely.
Chocolate Zucchini Bread RecipeINGREDIENTS:
1/2 teaspoon salt 1 teaspoon baking soda 1 teaspoon baking powder 1 tablespoon ground cinnamon 3 eggs 2 cups sugar 3 teaspoons vanilla extract 3 1(ounce)squares unsweetened chocolate melted 1 cup of oil 2 cups zucchini(grated) 1 cup walnuts or almonds(chopped optional) INSTRUCTIONS:
- Grease 2 - 8 x 4 inch pan. - Beat eggs, vanilla, sugar, cinnamon and oil cooled off chocolate together in large bowl. - Add all dry ingredients into bowl of wet ingredients and mix well - Then stir in walnuts or almonds(optional) and zucchini. Pour into prepared pans. - Bake for 50-60 minutes until knife come out clean when inserted. - Cool in pan for 15 minutes. Remove from pans and cool completely. |
